Sorbitol, also known as Glucitol, is a polyhydric alcohol that is naturally derived from dextrose, i.e., a solution of gluten-free wheat. This sugary alcohol has a sweet taste that metabolizes slowly into Human Body. It is referred to as a nutritive sweetener as it provides a high dose of dietary energy to the body. It comprises D-mannitol and D-glucitol, both of which are alcohols. Sorbitol has a mild sweet odor and is available in white crystalline form. It can be dissolved in both water and alcohol.
Sorbitol powder is obtained by the reduction of glucose and changing the aldehyde group to a hydroxyl group. This sugar alcohol can be synthesized from the hydrogenation of glucose under heating and high pressure in the presence of a catalyst called nickel. Chemically, it is a non-volatile polyhydric sugar alcohol that is stable in nature. It is not easily oxidized by air.
